Ingredients for Sugar Pepper Cake
- Bread dough 75 g
- Eggs 25 g

How to make Sugar Pepper Cake
Mix wet ingredients
Chicken eggs remove the white part of the egg, just take the yolk, then stir well, add 30g of milk and stir well. Next, add 50g of warm water and stir well.
Mix dry ingredients
Add 25g brown sugar, 3g yeast, 5g salt to 75g bread flour and mix until the dough is even.
Mix cake batter
Add the egg custard mixture to the flour and mix the mixture to form a mass to make the dough easier to knead.
Put the dough on a flat surface, layer the dough on the flat surface and on the right hand a lot because the dough has a high stickiness and wetness.
First you fold the dough, then use the back of your hand, press and rub, push the dough away. Note that pressing and spreading the dough away, not down. Rotate the dough by 90 degrees, repeat the two steps above. When the dough is smooth, add 25g of unsalted butter and knead until the dough is chewy and smooth.
Small tip: If mixing dough by machine, you must adjust the dough speed accordingly, you should beat the dough at a low level and then gradually switch to a higher setting.
Put a thin layer of oil in a bowl and then add the dough, cover the dough with cling film for 1 hour until the dough has doubled in size.
Roll the dough and shape it
Put the dough on a flat surface, put a thick layer of dough underneath, mix the dough one more time and roll the dough very thin with a rolling pin.
Cut the dough into a rectangle with a length of 5cm and a width of 3cm.
Put 500ml of oil in a deep pan or pot and wait for the oil to boil and then fry the cakes on medium heat. Flip the cake continuously until the cake is evenly golden on both sides. When the cake is cooked, put it in the basket and wait for the cake to drain the oil.
Put powdered sugar on the rail to sprinkle on the cake because powdered sugar is easy to clump.
